    • Something simple for a start...

      HONEY SNAPS

      image

      Ingredients
      50g butter
      2 tablespoons sugar
      3 tablespoons honey
      1/2 cup plain flour
      1 teaspoon baking powder
      1/2 teaspoon ground ginger

Melt butter, sugar and honey together in a saucepan.
      Remove from heat.
Add flour, baking powder, ginger and stir until mixture is smooth.
Drop teaspoon lots onto a cold oven tray, leaving enough room for the mixture to spread to double its size.
Bake at 180C for ten minutes or until golden.
Leave on tray for a few minutes to cool before removing to a wire rack.

      Makes 20.

    • DOUBLE CHOCOLATE CHIP COOKIES

      image

      Ingredients
      1¾ cups flour
      ¼ teaspoon baking soda
      1 cup butter/margarine, softened
      1 teaspoon vanilla extract
      1 cup granulated sugar
½ cup dark brown sugar, firmly packed
      1 egg
      1/3 cup unsweetened cocoa
      2 tablespoons milk
      1 cup chopped nuts
6 ounces (1 cup) semisweet chocolate chips

Combine flour and baking soda; put aside.
Use an electric mixer to cream butter.
Add vanilla and sugars, and beat until fluffy.
      Beat in egg.
At low speed, beat in cocoa, and then milk.
With a wooden spoon, mix in dry ingredients just until blended. Stir in nuts and chocolate chips.
Drop by rounded teaspoons onto non-stick or foil-lined baking sheets. Bake at 180°C for 12-13 minutes. Remove from oven and cool slightly before removing from baking sheets.

      Comments:
Umm, I got good reviews for this. Razz
But it's a bit on the sweet side, so you might wanna consider reducing the sugar.

    • my contribution .. chocolate cookies .

      image

      Ingredients
4 squares BAKER'S Unsweetened Baking Chocolate
      3/4 cup (1-1/2 sticks) butter
      2 cups sugar
      3 eggs
      1 tsp. vanilla
      2 cups flour
4 squares BAKER'S Premium White Baking Chocolate, melted
      Assorted Valentine sprinkles

      Steps

PREHEAT oven to 350°F. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended. Add sugar; mix well. Blend in eggs and vanilla. Add flour; mix well. Cover. Refrigerate 1 hour or until dough is stiff.

SHAPE dough into 2-inch balls; insert lollipop stick into each ball. Place, 2 inches apart, on greased baking sheets.

BAKE 8 min. or just until set. (Do not overbake.) Let stand on baking sheet 1 min.; transfer to wire racks. Cool completely. Drizzle with chocolate; decorate with sprinkles. Let stand until chocolate is firm.
