basically they like cook the rice for a while and then turn it upside down so it sorta like cook from up to down or something like that.

Dum Briyani is cooked by adding pre-cooked meat into the rice as the rice is cooking.. Nothing special..

heard biryani was ancient times royal food meant for Kings and queens. Form what i heard of, you wont get authentic Dum here. Dum = (Steaming with live coals).
Most Biryani sold here are made the normal way.Bw, also you dont get to actually see the cooking process. I meant most places claim they selling Dum . but you can't be really sure how authentic.

It was a show i watched on NGC some time back. Showed how the real Dum Biryani is made. They cooked packets of rice and meat with all the necessary spices and other ingredients in a huge giant coal oven.

You can get good briyani dam at The Briyani House at Arab Street It's located alongside some shophouses & stuff.
