"In my mind, the relationship between writers and critics is very like that between a cook and the customers at a restaurant. When a cook produces a dish, those who eat it will pronounce it good or bad. If the cook thinks the judgment unfair he can consider whether the critic is mentally unbalanced, ahs a furred tongue, is prejudiced or wants to get out of paying. He may be a native Guangdong who wants to eat snake, or a native of Sichuan who wants hot food. Then the cook may explain or protest – or, of course, he may say nothing. But if he shouts at the customers, “Very well, you cook the dish and let me taste it!” he will look rather like a fool."
